  1. Strip the herbs from their stems and finely chop.
  2. Clean and finely chop all of the mushrooms.
  3. In a large skillet melt the butter and add the herbs and mushrooms. Saute until the mushrooms are tender and the mixture is fragrant. Season with salt and pepper to taste.
  4. Mix bread cubes (crumbs) and sauted herbs and mushrooms together in the roasting pan.
  5. Add 1/2 of the broth, gentle mix together. Continue to add broth until the mixture is damp but not saturated in broth.
  6. Roast in the oven for 60-75 minutes. If the top is starting to look dry or browning too much cover with foil.

Add one of those large aluminum roasting pans that you only see during the holiday season to your shopping list so you can easily make just one big batch. Otherwise, opt for two glass 13″x9″ casserole dishes for baking. Have a lid handy for leftovers, too.
